Thank you for your interest in Eggland's Best eggs. We have looked very extensively into pasteurization technology in this country and abroad. Pasteurization is not 100% effective against organisms that can cause foodborne illness. It tends to give a false sense of security to those who consume eggs or use them in food preparation. Most cases of foodborne illness result from poorly sanitized hands, preparation utensils, countertops, sinks, etc., so it is still advisable to cook eggs and egg dishes thoroughly, even if prepared from pasteurized eggs.
We prefer to use a very comprehensive food safety quality assurance program, combined with mandatory vaccination of hens against Salmonella. Pasteurization changes the appearance and functional properties of eggs, whereas our program does not.
