- Super salads
You only need a few ingredients to make a fabulous, no-fuss salad at
home. Use a bag of pre-washed salad greens, some reduced fat
shredded cheese, and some leftover shredded chicken, turkey or ham
as the base for your salad. Accessorize it with sliced bell peppers,
tomatoes, onions, mushrooms, shredded carrots, a can of garbanzo
beans or some chopped boiled egg. Drizzle a little low fat salad
dressing on top and you’re all set!
- Creative quesadillas
Quesadillas make a great choice because you and your children can
customize them to meet your individual tastes. Start with whole
wheat or corn tortillas and add your favorite fillings, such as
shredded chicken or beef, shrimp, reduced fat cheese, roasted
vegetables and fat-free refried beans. Serve some fresh salsa and
fat-free sour cream on the side. If you don’t own a quesadilla
maker, you can also make them on the stovetop in just a couple
minutes.
- Homemade personal pan pizzas
Instead of ordering a pizza, why not make your own healthier version
at home? Start by splitting a whole wheat bagel or muffin in half to
use as the crust. Spread some store-bought pizza sauce over the
crust and top with reduced fat mozzarella cheese. Let your children
choose from toppings such as shredded chicken, turkey pepperoni,
sliced red or green bell peppers, onions, mushrooms and black
olives. Pop the pizzas in a toaster oven and bake for a couple
minutes until the cheese has melted.
- Stacked sandwiches
Kids of all ages love sandwiches, especially when their favorite
ingredients are stacked inside! Grab a loaf of whole wheat bread or
pita pockets and let your children choose their favorite lean meats,
such as turkey, chicken, ham or roast beef. You can personalize your
sandwiches by adding slices of reduced fat cheese, lettuce, tomato,
onion or pickles. Spread a little reduced fat mayonnaise, mustard or
ketchup on top to complete your sandwich masterpiece.
- Thrilling and chilling dessert
Now that you’ve finished your dinner, it’s time to chill out
with dessert! Whip up a sweet and satisfying low fat sundae in no
time with just a few simple ingredients. All you need is a scoop of
fat free frozen vanilla yogurt, a handful of fresh strawberries or
blueberries and a sprinkling of crunchy granola on top.
