Raw Cranberry Salad

  • 1 Lb. raw  cranberries (fresh or frozen)
  • 2  small boxes or 1 large Cherry Jell-O
  • 1/2 cup sugar
  • 2 oranges with rind
  • Chopped walnuts
  • 2 or 3 apples ---do not peel
  • white grapes
  • 1   15-16 oz  can crushed pineapple with juice--do not drain

Dissolve Jell-O in 2 cups hot water but use only 1 cup cold water. Grind berries, oranges and apples in either a hand grinder or food processor. Add sugar and pineapple to this and stir into Jell-O.  Cut grapes in half or quarters and add with walnuts.
Refrigerate overnight.   This makes a large amount.  I usually put it into an 10 cup bowl, to give everything enough room to mix well. Great with turkey or ham.
